To balance the flavours, in warmer years winemaker Chris Williams makes this blend of Alsace varietalswith a higher proportion of acid-rich Riesling, and in cooler years with a higher proportion of Pinot Blanc and Pinot Gris. The cool 2021 vintage has a nice balance of fruit flavours and fresh acidity, developing a complex, multi-layered palate.
