"Edomae" style sushi is the traditional nigiri style of sushi prepared with the freshest fish and shellfish sourced from the Sapporo Wholesale Markets. Our "shari" rice is a luxurious flavor balancing two types of vinegar. We procure rice directly from a local farmer in nearby Rankoshi. Edible garnishes including "Shiso" (parilla), Hosomaki and sliced ginger accompany each sushi plate.
